Date Night in the Kitchen: Baking Cookies to Welcome our Neighbors!

Last night Adam and I had a different kind of mid-week date night, and instead stayed home to bake a batch of cookies for our new neighbors. Two of our college friends recently purchased a home just up the street from us so we appointed ourselves the Welcoming Committee and got to work!

We scoured Pinterest for a cookie recipe we hadn’t tried yet, and when Adam had a sudden craving for Funfetti cookies, we decided on a Funfetti Sugar Cookie recipe from scratch!

Since we copied a recipe, I’m not going to list out the exact ingredients and process but you can click over to Averie Cooks and see exactly what we did! I did snap photos of our baking though, just to show how easy it was.

Here’s what we started with:


A pretty straight forward list of sugar cookie ingredients, but the kicker was the corn starch. I’d never used corn starch in cookies before. Apparently I’ve been missing out!


We then beat together the sugar, egg, both extracts, and butter.


The recipe said to beat with a hand mixer for about 7 minutes, or until the mixture seemed light and fluffy.


Next we added the remaining ingredients, and beat until everything was thoroughly combined.


Lastly, the sprinkles!



We baked ours on a silicone baking sheet, to prevent sticking. (<– LOVE this thing!!) 8 minutes at 350 was just right.


And voilia!


Of course, it wouldn’t be a Pinterest recipe without it turning out somewhat differently. Not so much a fail, but ours were definitely NOT huge and fluffy like in the original images. We did however only chill our dough for about a half hour, and it was really humid outside, so I imagine that caused the flattening. Who knows. Either way, still delicious and easy!

We delivered them to our friends’ new home and welcomed them to the neighborhood! We are officially the coolest neighbors on the block.

I would give this recipe a thumbs up for sure, but, I wouldn’t add as much almond extract as it calls for. Adam likes them just fine, but I am not a huge fan of the almond extract taste. Just me though!

    I’ve always been partial to being the type of person to create baked goods for neighbors and new neighbors alike. For special occasions, holidays, etc. My mother has always done it since I’ve was little and it carried over as a habit of mine. People appreciate it so much! These funfetti cookies look AMAZING. Ship some to me?…Haha. Sprinkles always get me.

    I think the lack of puffiness comes from the heat! Usually you need the dough to be pretty firm if you want them to have that super fluffy look. That being said, I wouldn’t turn down one of these for anything 😉 . I actually like less fluff and more crispy top/gooey middle even if they aren’t quiiitteeeee as pretty!

      I believe you are correct! Next time we won’t be so lazy and will chill them much longer 😉 I like my cookies a little gooey in the middle as well, so it wasn’t a lost cause!

    YUM these look so good!! Totally going to have to try these 🙂 I recently discovered putting cornstarch in cookies and it really is the best thing ever!

      They were delicious! And I had never even heard of putting cornstarch in cookies, who knew??
