Hey everyone! Have you read part 1 of my Walt Disney World Marathon race recap yet? Better get to it before I post part 3 tomorrow!
Just popping in real quick to share a short and sweet weekend recap.
This weekend was exactly what I needed – restful yet productive. I’m finally feeling about 80% energy wise, so I think being home this weekend and avoiding the gym all week has helped. We had one of our best friends over for dinner Friday night since his wife was out of town, and I pretty much passed out on the couch by 9. The boys were playing some board game after dinner and I just could not keep my eyes open. Saturday morning I slept in until about 9, and it was glorious! Adam worked on finishing up the pallet entryway table he started a few weeks ago and I stayed inside to clean and organize several areas of the house. I finally finished a few collages, and added updated photos, and put away an ungodly amount of laundry. I should really get some sort of bonus for putting away that much laundry. I’ll have to share more on the collages later when I have some better pictures, and the entryway table for sure.
Saturday was a gorgeous day, and I kept the windows open for most of the afternoon so Truckee could keep a watchful eye on the neighborhood while I cleaned.
I mentioned the collage above our bed several months ago, hmm like, in July. And I just now finished it. So basically we’ve had photo frames with pictures of stock-photo families for 6 months now.
Clockwise – the top left is a Katie Daisy print that says “Going to the mountains is like going home”, next is our wedding invitation, then our first family Christmas card, then a print from Hobby Lobby, then a print that says “Not all who wander are lost”, then a LOVE metal sign, then an Arkansas gold foil print, bridal portrait, initials, Come Thou Fount of Every Blessing music sheet, and my wedding bouquet.
I still need to share my new work space, but it’s not quiiiiitttee complete yet. So hold your horses! I’m currently trying to convince Adam to make me a cute wooden race medal hanger/hook of some sort to put above my desk.
Saturday night we went for mexican with our same friend, who also happens to basically be our neighbor, and I ate way too many nachos.
Sunday morning, I woke up to Adam bringing me breakfast in bed, and Truckee simultaneously trying to negotiate some sort of deal.
After church, we ran by Target and Home Depot, and I picked up a few organization needs, and Adam grabbed a few house needs. We came home, I took Truckee for a nice long walk (in the upper 60’s!!), and finished sanding and sealing the pallet table.
I’ll go ahead and count this as my first post-marathon workout, albeit little. It felt good to get some sunshine, fresh air, and get Truckee moving again! I hate the winter for that very reason – I never have time to walk her! I’m going to try to head to the gym tonight, so we’ll see!

I’ve also been trying to be more proactive about meal planning on Sundays, even though I failed my first attempt yesterday. I guess I’ll start today! My latest strategy has been all about using ingredients we already have, and taking advantage of leftovers, and meals that we can spread out over a few days. To help, and against my husband’s wanting, I’m thinking introducing one casserole a week would help! I grew up on casseroles, but my husband did not. But to me, there’s nothing easier than whipping together a casserole and calling it a day. Eat on it for several meals and BAM. Easy peasy.

I think everyone can agree that even though casseroles may not be the healthiest option around, at least they are time saving! And amen for that! I’m all about saving time in 2015, and making my life a little bit simpler.
