As promised though, I have a delicious recipe for you!
Double Chocolate Chip Oatmeal Cookies Made with ‘myoatmeal.com’
I was given the opportunity to try out a custom oatmeal product, My Oatmeal, thanks to the ladies of Fit Approach! We were asked to also create a recipe to further test out our new oatmeal creations.
My Oatmeal is an online oatmeal shop where you can create custom oatmeal blends, adding just about any ingredient you can imagine!
On the site, you go through 8 easy steps, then place your order!
1. How much – quantity of oatmeal
2. What kind of oats
3. Pick your oatmeal flavors
4. Pick your fruits
5. Nuts, Seeds, & More – flax seed, chia seeds, etc.
7. Shipment time – once, weekly, etc.
8. Name of your blend
I knew immediately that I would want to make oatmeal cookies, so I opted for a blend that would complement my cookies well. Here is what I put in my blend: quick-rolled instant oats, double fudge brownie/graham cracker crust/and oatmeal cookie oatmeal flavors, flax seed, sliced almonds, and brown cane sugar. I placed my order in two minutes tops, and was very impressed with My Oatmeal’s service! My shipment arrived in about a week, and smelled delicious!
Now about that recipe!
I called up my grandmother and asked her to share the basis of her famous oatmeal chocolate chip cookie recipe. I then tweaked it a bit, added a few things, and of course used my new “Cookie Blend” oats! I made this recipe late one night, so excuse the harsh kitchen photos
Here are the ingredients you will need:
-3/4 – 1 cup oats (your preference)
-2 1/4 cups flour
-1 1/2 tsp baking soda
-1/2 tsp salt
-1/4 tsp cinnamon
-1 cup butter (2 sticks)
-3/4 cup brown sugar
-3/4 cup white sugar
-2 tsp vanilla
-2 T cocoa powder
-1 cup chocolate chips
1. Cream the butter, both sugars, and vanilla.
2. Add the eggs and beat until fluffy.
3. In a separate bowl, combine the remaining dry ingredients – flour, cinnamon, salt, baking soda, cocoa powder, and oats. Then add it to the wet mixture, and mix well.
4. Fold in the chocolate chips.
5. Chill dough in freezer for 10 minutes. Then scoop and mold into teaspoon sized balls, roll, and place on non-stick cookie sheet.
6. Bake at 350* for 10-11 minutes.
7. Let cool and ENJOY!
My office, as well as my husband’s friends all placed their seal of approval on these cookies. They are delicious! I made the mistake of ordering instant oats, instead of regular oats, so the oats don’t expand as much in these cookies like most traditional oatmeal cookies, but all of the flavors in my oatmeal blend came together perfectly!
