Meal Planning: Week 2

Happy Almost Thursday! We’re slowly but surely inching closer to the weekend!

This weekend should be a blast, but you won’t hear about it until next week 🙂

Tonight’s post is short and sweet! If you saw my last post on meal planning to save money, you will remember that I am on a budget-buster kick and I am actually somewhat enjoying mapping out our meal plan for the week!

I wanted to show you this week’s plan, mostly to hold myself accountable, because we all know Zaxby’s is just under a mile away.


This is a short week for us, dinner wise, because of weekend plans. So, I tried really hard to maximize our budget and use leftover ingredients as much as possible. Thus, our accidental-somewhat-mexican-themed meal plan! Lunch is also pretty scattered this week because we both had made plans already to eat out a couple times.

Guess how much all of the ingredients for all of this cost? A whopping $46. And keep in mind, we really didn’t have any of the basic ingredients like onion, pico, cheese, salsa, sour cream, etc, so I figure $46 to make 10 dinners (we had friends over Tuesday), 5 lunches, and breakfast isn’t too bad!

Next week we’ll get back to more meat and veggies for dinner.

Here’s Monday-Wednesday’s dinners. Not our healthiest week, but super easy to say the least! And really, the soup and taco bowls have lots of black beans, corn, avocado, onion, and tomato. So how bad can it all be?? Just pretend like everything wasn’t also covered in cheese this week.

I’m still riding the feel-good-I-love-running-cloud from last Saturday’s 9.25 miler, so that’s been my excuse for not running this week yet. I ran in my mind, okay? I’m planning on doing an easy 5 tomorrow, and another ~9 on Saturday! I’d really love to go ahead and hit 10, but I don’t want to kill myself this weekend either.

I’m trying to get some post ideas together for next week…thoughts?

Blogging/SEO stuff, another photography 101 lesson, stick to running recaps?

    Ohh the quesadillas! I am SUCH a sucker for a good quesadilla, and that looks and sounds absolutely perfect!

    I could totally handle your meal plan. Those black bean quesadillas are enough to make me forget all about meat! Hopefully they’ll be some recipes soon. You can’t just taunt us like this 🙂
