Make Ahead Frozen Breakfast Burritos

Hi friends!

Ready for a quick recipe? I can’t take credit for this one though, this was all my husband! If you follow me on Insta, then you’ve already seen these delicious creations!

We’ve been wanting to find a filling, and easy meal that we could quickly grab on the way out of the door in the mornings. We’re both guilty of requesting a quick donut stop on the way into work simply because we’re both starving! And when you’re starving, you’re even MORE tempted to eat something that’s AWFUL for you! So, to solve this problem, my husband pre-made 10 breakfast burritos Sunday night, then froze them. And this whole week, we’ve been enjoying our protein-packed burritos when we get into the office, instead of being tempted by stopping elsewhere! I hate that the word “burrito” has such a negative connotation attached to it, but I can assure you, these aren’t your everyday double stuffed taco bell burritos! I’m all about those super healthy/trendy breakfasts like Chobani, oatmeal, fruit, etc. etc. etc. But this girl likes real food too, and I have a feeling you do as well!

So what’s so great about breakfast burritos? They may be filled with both carbs and protein, but they’re packed for a reason – breakfast needs to be your biggest and most substantial meal of the day! Your body NEEDS that fuel first thing in the morning, especially after basically fasting all night long! Since these are so filling, they will help keep your lunch size in check. Raise your hand if you’ve ever completely pigged out at lunch because you didn’t eat breakfast, or you ate a bowl of sugar that wore off in two seconds. By eating a breakfast that will stick with you longer, you won’t be gnawing at your arm come 11:30, and you won’t be overly stuffing your face either. And I guarantee, when you stop pigging out at lunch time, that “2 o’clock slump” won’t hit you quite as hard!

These make ahead breakfast burritos are so simple, and fairly clean. You know exactly what’s in them, and aren’t left checking the ingredient list like you are the back of a frozen Jimmy Dean breakfast muffin sandwich. (Which totally has MSG in it…so be sure you buy sausage for your burritos that DON’T have ‘Monosodium Glutamate’)

Just take a gander at how EASY this was! And to think, breakfast is solved for 5 days, for two people!

Adam only used one skillet to cook these: our trusty cast-iron skillet. Cooking everything in the cast-iron skillet makes for a delicious combination of flavors! Mmm! SO good!

Make Ahead Frozen Breakfast Burritos

Here are the ingredients:

-10 tortillas of choice (large)
-1 diced onion
-1 bag frozen hashbrown potatoes OR 2-3 decent sized cooked potatoes, diced
-1 package of sausage (we used a Maple flavored one this go around, and it added awesome flavor!)
-1-2 cups shredded cheese of choice (we combined cheddar and pepeprjack)
-1 dozen eggs, scrambled
-1 package Saran Wrap

I think these photos are pretty self-explanatory. Cook everything except the onion and cheese, then load ’em up!  I apologize for the dark photos, it was getting late.

    I love breakfast burritos. We have loads in our freezer and my husband loves them before work in the morning.

      I think it took like 15 minutes to put them all together, plus maybe 10 mins to cook the potatoes and eggs! Super quick! Just put on a tv show and make them while you watch!

    I like that these are make ahead. I never have much time in the mornings to make breakfast unless it’s the weekend.

    I do this too, but I make a month supply at once. It is so convenient to just heat these up and go, plus it saves money on buying breakfast food that is junk and doesn’t keep you full long.
