How to Make Homemade “Bagel Bites”

Hi all! Happy Wednesday!

Just wanted to pop in real quick and share last week’s Pizza Night recipe!

If you’ve been following for a while then you know about our ritualistic date night every Friday night where we stay home and make a new version of pizza. It’s probably our favorite night of the week, and we’ve stuck to it for almost an entire year! It may not be the healthiest tradition, but a little fun never hurt anyone, and we both enjoy each other’s company more than anything. Since we weren’t home last Friday night, we compromised and held our weekly pizza night on Thursday night instead.

I sent my husband to the store to get pizza supplies, and before he returned home he texted me this glorious flashback.Β 

That’s right, Bagel Bites!! Who remembers these tasty frozen treats?! Definitely a staple in our freezer growing up. Right next to the Totinos Pizza Rolls.

We made our own version, and they were even better than the originals, though it was a close call – it’s hard to beat the 90’s taste of frozen fake cheese and processed pepperoni cubes πŸ˜‰

Homemade “Bagel Bites”

Here is what you’ll need:

Preheat oven to 400*.

-Bag of mini bagels, sliced in half, preferably whole wheat, toasted
-Tomato paste
-Cheese of choice (we used fresh mozzarella as well as Go Veggie mozzarella)
-Diced green bell pepper
-Sliced pepperoni (if you buy it at the deli counter, it’s super cheap and much better!)

1. Toast bagels in oven at 400* for 5-8 minutes before adding tomato paste.

4. Layer on all your toppings, then bake at 400* until the cheese is melted and golden brown around the edges. Easy peasy!

    Oh my goodness I totally forgot about bagel bites until now! I used to love those and taquitos! Oh and I can’t forget lunchables. πŸ™‚

      Becky, I used to LOVE lunchables!!! Remember the pizza kind?? You could even microwave them for like 10 seconds to melt the cheese and they’d be amazing!

    I just had Bagel Bites for the first time in oh, I don’t know, 15 years this week. My husband bought them as vacation snacks. And they really were every bit as mediocre as I remember. But I still managed to eat 10. πŸ™‚

    Your version looks delicious. We rarely ever buy frozen meals, so these were a fluke, and I’m sure we’ll try out making our own to combat that in the future!

    I used to LOVE Hot Pockets! Haha oh, the memories. They were finicky little snacks though because if you didn’t heat it quite long enough the inside was still frozen. But a second too long and you had scorching hot cheese lava burning a hole in your mouth!

    Oooh, so cute and looks so good! I used to have a serious craving for bagel bites all the time as a kid. Favorite afternoon snack after school. Yup. Even better than those pizza rolls! Haha. This recipe is so much healthier and I like how you can customize. Pinning it! Thanks for sharing!

    YUM. In my household we also have a tradition of making a lot of Fridays pizza night! I love making a whole wheat pizza and switching up the toppings, but our favorite is spinach, zucchini, roasted red pepper, mozzarella & basil!
