Easy Open Face Enchiladas

Good morning, everyone! I am so, so excited it’s almost the weekend! What about you?? Time has been flying by lately, and now that we’re having a burst of fall-like weather, everyone’s spirits seem to be lifted! I am counting down the days until I can enjoy one of these…

And wear these every day, regardless of my outfit…

Ok, ok, I don’t actually have these in my possession…yet. But, I’ve been dreaming for years about owing a pair of these beaut’s. Oh Frye, why must you be so expensive. Maybe this will be the year I convince myself that you’re completely worth it. After all, my other 4 pairs of boots are “totes” last season. Right?

Sound good? Ok, back to reality.

Yesterday’s workout was an easy, but enjoyable one. It was absolutely gorgeous outside so Adam and I decided to tag-team Truckee’s walk. We only went a mile, up and down our hilly neighborhood. It may not sound like much, but mix in an overly anxious labrador and some hill sprints, and it was quite the fast workout! So, I will count my little one mile, because a mile is a mile after all. And remember, on days when you aren’t actually training for something or taking a rest day, please, please, please at least be active for 20-30 minutes! Anything to get your heart rate up and your sweat on will suffice!

For dinner, I made open face enchiladas! They’re super easy, and equally as yummy. Seriously…I don’t DO difficult recipes…we all know this to be true. I snapped a few pictures to show off just how easy these are to make. They’re always a hit with the husband, and a hit with the budget!

Above is everything you’ll need. I bought the Kroger brand of several things to make it even more budget friendly. Usually we have several of these on hand already, but this time we just happened to be all cleaned out.

-Shredded cheese

-Diced onion

-Chopped avocado

-Cilantro

-Tomato (not pictured)

-1 can diced green chili peppers

-1 can green salsa or “verde” sauce

-A few scoops of salsa

-A dollop of sour cream

-Butter for the sauted onions

-Corn tortillas

First, saute the onions until they’re a light golden brown around the edges.

Next, in a small sauce pan combine the chili peppers and the verde sauce and stir until hot. If it comes to a light boil, that’s a-ok. Then, grill your torillas so they’re slightly crispy.

Melt a handful of cheese on your tortilla. You will do this to 3 tortillas, then stack them on top of each other.

Add a heaping spoonful of your new green mix on top of your cheesy tortillas, then a scoop of onions.

Next, toss on your cilantro, avocado, and tomato. Finish off with a spoonful of salsa and a plop of sour cream.

And there you go!

    I don’t think I’ve ever seen an open-faced enchilada before; they look delicious! I’m making up my grocery list this afternoon for the next couple weeks, and those may just have to end up on the menu :)

    I love all things fall; the changing colors, the cool air, and of course everything pumpkin!

    I don’t know that i could pick a favorite part of fall. I love it all….pumpkin, perfect running weather, jeans and sweaters, my bday, tail gating, chili and all my favorite fall foods…ahhh getting excited just thinking about it!! Those enchiladas look great! I’m not normally the cook in our house (baker thank you very much ;) ), but even i think i could handle that…just might give it a try one night to surprise my man ;)

    I have been denying that fall is anywhere near, but this post reminded me that it may not be so bad. I really do miss Midwest falls though. The trees are just so beautiful!

    It was Mexican night in our house as well, although yours looks like it may have beaten ours ;)

      Ashley- It really is just around the corner, but I’m afraid this burst of “fall” like weather is just a temporary joke here in Arkansas. I imagine one more round of heat will be back! Mmm mexican night is always a winner, no matter what!!

    Ohh man you’re reading my mind!! I literally cannot wait for the return of my pumpkin spice lattes. I probably will overdose on them once they come back! And I think you should splurge on those boots ;). I wear them practically everyday when it gets colder. So perfect over leggings!

    Oh I dont know if I can begin to think about Fall. I love summer so much. The sun and beautiful warm weather. However, summer does stay through Sept here in Seattle. I do like watching the leaves change and seeing more pumpkin flavors in products!

      Tara- I understand! We’re way down south in Arkansas so it’s a whole different story :) My husband and I keep talking about making a trip to Seattle one day..we’ve both never been and have heard such great things about the city! I bet it’s beautiful up there!

    I just want to say, I love your food photography, it makes me want to get bed at food photography as it’s clearly my weakness.

      Jamie- Yay! Football games are such a staple for fall and I just love it! It always makes me remember those fun high school nights! But not high school, of course. HA! I went to a D2 college so our football team was nothing to brag about! Love me some Tennessee football though I have to admit ;)
