Homemade Burrito Bowls & a Humid Run to Boot

Hi sweet readers!

Last night’s workout was a doozy. And it kicked my butt, if we’re being completely honest. That’s right, a simple 3.1 mile run on a route I run often, had me wishing I could jump into the river and call it quits. It happens to the best of us, I suppose. I ran while my friend Erin biked beside me, so having some company made it much more enjoyable.

I literally ran my marathon faster than I ran this 5k last night, pace wise. And I don’t even think it’s because I’m that out of shape, but because I did everything yesterday pre-run that you AREN’T supposed to do before a run. And while a poopy run is completely my fault, if I were to play the blame game this is what I’d blame it on: I only ate a small salad at lunch, drank TWO diet cokes, only 1 glass of water, it was ridiculously humid, I’ve only ran 3 times in the past 3 weeks, and I slept terribly the night before. Not exactly the best combination of factors. But, I’m only human, and one embarrassingly bad run isn’t going to kill me! Getting out there and running is better than not doing anything at all, and getting some fresh air makes it all worth it.

To make up for my flopped run, I decided I needed to at least make an amazing dinner! So, burrito bowls it was!

Homemade Burrito Bowls

Here is what I used:

-Rice (Let’s pretend I used brown rice. I actually used quick white rice because I was hungry enough to eat my arm off and couldn’t wait. How do people live off of salads for lunch??)
-2 diced avocados
-1 diced tomato
-1 can of black beans
-Cilantro
-1 small diced red onion
-Shredded pepperjack cheese
-Miss Renfro’s habanero mango salsa (or salsa of your choice)

I boiled the rice, then drained it and added a couple slices of butter, because I live in the south and you add butter to everything.

Then I loaded on the avocado, (hello healthy fat!) tomato, black beans, cilantro, and onion. Next I shredded some pepperjack cheese, and added a couple spoonfuls of salsa to top it off.

They were delicious! Not quite up to Chipotle quality, but pretty dang tasty and budget friendly!

A couple things I would consider adding next time would be shredded lettuce, and maybe a dollop of sour cream. I mean, why not?

    Ughhhhh I HATE when I cave and have diet coke when I know I”m running later. For some reason it makes me feel so crappy. But I can drink all the coffee in the world? Anyway, my morning runs have been eh lately. The onset of 97% humidity is really taking it out of me. We’ll get used to it!

    Burrito bowls are one of my favourite meals because you can just throw everything in. Plus, it has guacamole in it 🙂

    I’m glad your not beating yourself up over 1 bad run. I cannot run anymore but do spin and stick to the stairmaster and intervals. I don’t think I’ve skipped a cardio session in 6 months and there are still days that it feels like I won’t possibly make it past my 7 minute mark. You have the right attitude andre bout it being better than nothing at all. Your burrito bowl looks fantastical. I hope your next run goes smoother! I’m sure it will!

    Shake off that bad run and get back out there! This humidity is horrid for running but your body will get used to it. Plus, look for some awesome fall/winter PRs because of it! I used to follow recipes to a T, but now I just throw stuff in and call it good. I don’t even pull out my measuring spoons unless I’m baking, usually!

    We never make burrito bowls at home, I need to try that!!

    The humidity down here is killer too – it’s a big part of the reason why I’ve been slacking so much on running!

    First of all, those burrito bowls look ridiculous and I want one NOW! Chipotle Burrito bowls get me every.single.time.

    Second, if I ever run 3 miles in my entire life, I will consider it an accomplishment 😉
