Today is a special, special day! It’s our 3 year anniversary! Hard to believe, but time flies when you’re married to your best friend and genuinely enjoy living life with them each and every day! This next year is going to be amazing, and it’s fun to think about how different next year’s anniversary is going to look!
Ok, back to the regularly scheduled program.
If there’s one thing we LOVE about summer time, it’s cooking on the grill as much as possible. And to make things even sweeter, meals on the grill are incredibly inexpensive!
Last Friday night my husband whipped up delicious (read: mouth watering good) vegetable quesadillas, and we’re still talking about them. They were healthy, filling, and full of fresh flavors. I forgot until I was stuffing my face to take any pictures, so the photos for this post are slightly limited. Sorry friends!
We’ve made a similar recipe using goat cheese, which are equally as tasty but definitely offer a unique flavor.

Easy Grilled Vegetable Quesadillas
-2 ears of corn, shaved once grilled
-1 orange bell pepper
-1 green bell pepper
-3 small yellow squash
-Shredded cheddar or colby cheese
-1 can red kidney beans
Grill all of the vegetables first, seasoning as you like. We like to give ours a little kick, but that’s just us! At the same time, cook your beans on the stove. Once everything is grilled, dice it all up. Next, get out your tortillas and spread a bottom layer of cheese. Next, add your veggies, beans, and another thin layer of cheese. Place on panini press or grill until perfectly crispy!
I ate half of mine before I remembered to stop and snap a photo, so the actual serving was 4 slices. We served ours with a little dollop of sour cream, and voila! If you’re avoiding dairy, these would still be tasty without the cheese and sour cream, though you may want to add some sort of base on the tortillas that would go with the veggies. Hummus maybe? I don’t know, I’m still a fan of the cheese!
We ended up having enough veggies left over that we were able to use them for lunch the next day. Again, another cheap and easy meal!
