With the big game right around the corner, or this weekend for those of you who were blissfully unaware, it’s time to start thinking about the best part…the food!

We are hoping to have a few friends over Sunday night, so I’ve been brainstorming snack ideas. I think I’ve decided on this super easy homemade snack mix. It’s fast, and sure to please even the pickiest of palates. Also, I’m pretty sure anyone can whip together a fabulous snack mix! Thanks to Blue Diamond Almonds, I was able to incorporate a little extra protein into the mix. This could definitely fall in the category of, “game changing!”

Easy Chipotle Almond Snack Mix Recipe

Here’s what you’ll need:

-Chipotle Smoked Blue Diamond Almonds, 1 can
-Whole wheat chex cereal, half a box
-Goldfish, half a bag
-Cheddar Jack Cheeze its, half a box
-M&M’s, 1 large bag
-Peanut Butter chips, 1 bag
-Pretzel sticks, 1-2 cups
-Dried cranberries, 1 small package
-Pumpkin seeds, 1/2-1 cup
-Butter, 1/2 cup

First, just like my grandmother always did with her annual holiday snack mixes, spread out your chex, goldfish, cheeze its, and pretzels on a cookie sheet and pour your melted butter over the top. Optional: sprinkle some garlic powder and chili powder on top for an extra kick. Then bake at 350* for 10 minutes, or until you start to notice a change in color.

Let cool.

In a large bowl, pour in your baked mixture, followed by the rest of your ingredients. Mix well.

And voilia! How easy is that?!

I’m always looking for a tasty treat to keep around at work, and I think this might be perfect. In small quantities of course. I’m excited to debut this snack mix during the big football game! I imagine the boys will devour it!

Tonight we’re headed to a friend’s house, and the rest of the weekend I imagine will be pretty chill. We’ve got a couple busy weekends coming up in February so we’re soaking up our Saturday mornings at home! If it’s nice out, maybe I’ll squeeze in a short run around the lake, or take Miss Truckee on a long walk. It’s been a long week, and some fresh air is sounding pretty good!

Happy Friday!

What are you making for the big game? Any big plans this weekend? What would you put in a snack mix?

Oh yum, that sounds amazing! I’m excited to watch the game with my family this weekend – I’ll be helping make some empanadas and other little fingerfood-type things to enjoy while we watch 🙂
