Easy Zucchini Spaghetti Zoodles Recipe

Hi friends!

I promised a fun recipe, and here it is! Last weekend Adam got a little artsy in the kitchen and made us a delicious, and HEALTHY spaghetti dish using zucchini, goat cheese, and red peppers. Vegetarian + dairy free!

He based the recipe off of this one, and it turned out to be delicious!

Here’s a quick play-by-play of how it went down:

As an appetizer, and meal accent, he made slices of garlic bread first.


Then he roasted the red peppers on the grill outside, before combining them with the goat cheese in the food processor to make the sauce.

To make the “spaghetti” noodles, he used our new spiralizer with zucchini. I had never seen this done before and I couldn’t believe we haven’t been doing this for years! So much healthier!

Next, he sauteed the “noodles” before adding everything together for the dish.

I think we both would recommend this recipe, and will for sure be making it again! I’m not a huge fan of traditional spaghetti, so this was a much healthier take, with a much more unique flavor!

    MMm that looks DELICIOUS! I’ve been debating a spiralizer for a long time. I might just need to get one now! Have a great day outside! It’s still pretty cold here. This week it is going to the 60s and 70s though! I can’t wait!
