Continuing to Simplify: Our Meal Plan for the Week

This weekend was cold, cold, cold! Last week was gorgeous and in the 70’s and 80’s, so a cold snap was not exactly welcomed! We quickly decided that our weekend plans would consist of staying inside and continuing our quest for simplicity. I wrote a post a few weeks back reflecting on Emily Ley’s A Simplified Life book, and we’re still trucking right along, slowing simplifying different areas of our lives and home. On the list this weekend was tackling laundry piles (some years old, truth!), a deep vacuum, cleaning out old purses and making donation bags for them, organizing our master closet, and decluttering our master bedroom. It was a much needed day of cleaning, and we both went to bed Saturday night feeling exhausted but accomplished.

Sunday’s act of simplifying didn’t consist of rigorous chores, but rather something I’m constantly trying to work on: meal planning! We’re going to have a few nights this week where our schedules will be thrown off, so I wanted to make sure I had groceries already purchased and prepped. I’m a huge proponent of meal planning and buying everything for the week at one time, but I’d be lying if I said we did this every week! We certainly don’t! But the weeks where we do – game changing.

I’m always curious what other people have on their weekly meal plans, so I thought I’d pop in share ours. This week we’re utilizing our local Kroger’s Click List grocery pickup service, and I’ll go grab everything first thing in the morning after I drop Adeline off. I am already feeling less stressed about an “off” week and excited about our dinner options. I’ll also share our grocery total, because I always seem to get a huge response from people on Instagram who are stunned at the dollar amount.

Let’s get to it.

Breakfast

Monday – Friday: Bacon, Eggs, English muffins

Lunch

Monday – Friday: Deli sandwiches, Chips, Olives + Mixed fruit (which I forgot to order, oops!)

Dinner

Monday: DIY Pizza (one of our favorites, but we’ll be sticking to pepperoni this week!)

Tuesday: Crock Pot Baked Ziti (would normally add a side salad, but I just can’t do salads lately!)

Wednesday: One Pan Italian Chicken/Baby Potatoes/Green Beans

Thursday: Steak/Baked or Mashed Potatoes/Corn

Friday: Date Night or Leftovers (probably leftovers because we’re on a mission to save!)


Total: $77.85 ($82.50 after pickup charge)


Things to note

We already had green beans, corn, and several cheeses, so that helped motivate our meal picks. We also typically do pizza night on Friday night, like religiously, but because of this “off” week I wanted to find a fun and easy dinner for me and Adeline to make together, so it got moved up. I also typically wouldn’t put two red-sauce type meals back to back, but again, it’s a weird week and Adam doesn’t like Ziti so Tuesday night it was. Lastly, I’ve been craving meat + potato type meals lately, so they seem to be on repeat. It’s not the most interesting meal plan in the world, but it’s easy, and will satisfy this preggo’s tastebuds.

If you’re wondering how Adeline fairs at dinnertime, she typically eats pretty well. Of course some nights it’s more of a battle than others and she ends up with a cup of applesauce, and we end up with a cup of grace!

    I always love seeing other people’s meal plans, gives me lots of ideas. I made a big pot of albondigas (a meat ball soup) yesterday that we ended up not making it home in time to eat for dinner, so we will
    be having that tonight.

      Ooh meal ball soup sounds tasty!! It’s been a little chilly around here lately so that is a great idea! Soup is always so easy to eat as leftovers too!

    My meal planning gets so much harder this time of year because Riley starts having to work late. I’m not about cooking some big thing and not have him home until 8:30! I bought a bunch of salad stuff and freezer dishes from Trader Joe’s that I can just throw in a pan and stir around after a long day at work.

      Haha for sure!! Cooking for one is so hard, and even cooking for two is hard when your schedules don’t align! Then you have to think about keeping it fresh, yada yada!

    That is a great price for your groceries for the week! I’ve been buying containers of humanely raised shredded chicken from my grocery store. On busy weeks I love having it ready for sandwiches and salads.

    I love these posts as meal planning has become a MUST in our house. This week we have grilled flank steak, takeout pizza, fajitas and oven roasted halibut on the menu. Our go-to for busy nights is tacos or hamburgers. A lot of times I’ll brown ground beef at night after the little one is in bed – so its easy to grab out of fridge when I come home from work and then just finish the meal in under 15 min. A quick step to make dinner so much easier!

    I used to post my meal plan every Sunday! Now I just email it to Rich and myself to reference. Here’s what we are making this week.

    Sunday- Cheeseburger Salads (just cheeseburgers over a salad, essentially burgers without a bun)
