Easy Spinach Bacon Pizza

Well hey there! Looks like somebody is having a late evening, just like myself. I’ve got a treat to reward you for staying up later than usual, and I think you will love it. I do, and I’m constantly begging my husband to make this for our weekly Pizza Night!

But first, let’s talk about how a workout just didn’t happen today.

It was super cold, again. And after my gym run last night, I decided that as mentally prepared as I was to get back to running and half marathon training, that right posterior tibial tendon of mine just isn’t. I did two fast miles to test her out, and after those two miles I was already feeling it again. I know it’s still tender from the marathon, and I know that it was in fact already injured before the marathon in the first place. I keep forgetting that 26.2 miles is A LOT of stress on your body, and it was just over a week ago at this point. So here’s to being patient, and giving my feet and ankles a little more down time. Frustrating, but hopefully this weekend I can add a few more miles and put this extended “rest week” behind me! I had high hopes to run a local 5K here in Little Rock this weekend, but I think I’m going to push it back and do one later this month or early Feb.

I wore my marathon shirt, and I know what you’re thinking. I’m thinking it too. When will races start providing men’s AND women’s sized shirts? One more dress for my collection: check! It is really comfy though, so I can’t complain too much! I wore my MaxFlow headband, and was very impressed that it stayed on for those two sweaty miles! I was running HARD, so I was excited when it didn’t fly off mid-run! I will say though, I sometimes wonder if different types of hair, and didn’t shapes of heads can effect how well headbands stay put.

I stumbled across this quote tonight, and I fell in love.

Easy Homemade Spinach Bacon Pizza

My husband found a version of this recipe floating around Pinterest and decided to give it a try. Turns out, it’s probably the best pizza we’ve made thus far! Warning: it’s probably not the most healthy pizza recipe you will ever see.

Here is what you will need:

-Pizza crust (we just buy one in the can and roll it out on a cookie sheet, don’t forget to pre-bake it first though!)

-6-8 pieces of cooked bacon

-4 oz of cream cheese

-Several heaping handfuls of spinach

-Minced garlic

-Diced grilled chicken (optional)

-1 cup parmesan cheese (about)

-1 cup cheddar cheese finely grated (ish)

-Fresh mozzarella cheese, sliced

1. Pre-bake your pizza dough! Don’t forget this step! If you don’t, it will be soft and chewy! Yuck. Just read the directions, k?

2. Cook your bacon. And chicken if you’re using chicken as well. We didn’t this time because we actually forgot. And now that we’ve had it both ways, I think I prefer it sans chicken.

3. Sautee the spinach leaves with the minced garlic (mmm) until cooked, then combine with cream cheese (softened) and half of the parmesan cheese. Mix it up! P.S. Remember to throw in WAY more spinach than you think you will need because when it wilts it disappears quickly.

4. Spread some olive oil on the dough, then spread your parmesan/cream cheese/spinach mixture all over the dough. Or half-way baked crust at this point.

5. Sprinkle on bacon pieces and chicken

6. Add more cheese, i.e. cheddar cheese, rest of parmesan, or large slices of mozzarella cheese like we did

7. Bake at 400* for another ~12 minutes. Or so.

8. Let cool, and chow down!!!

Seriously the best pizza ever.

AND it bodes well for a perfect long-run-carb-loading meal! I know, all you dietitians cringe when I say I eat pizza the night before long runs. I know, I know. I could probably pick a better meal. But tradition is tradition, and if my belly is happy, I’m happy.

We started our Friday night “pizza night” tradition about a year ago, and have loyally stuck to it unless we happen to be out of town! Usually, whoever doesn’t make the pizza is in charge of making a dessert. And whoever makes the desserts, gets to pick the movie for the night 🙂

    YUM! That looks so good! Sadly I don’t think I could make it- the bf doesn’t like cheese! (GAHHH). And then I’d be forced to eat the entire pizza myself and I’m fairly positive that would not be healthy… hahaha 🙂

    Come run a marathon in Oregon! I almost always get to choose mens/womens sizing! Though – at the Portland Marathon my size small was huge!

    So funny- Friday night is homemade pizza night in our house too! We get some new bottles of wine and watch a movie. It’s the best way to start the weekend! This pizza looks awesome, I don’t think it would be hard convincing Riley that bacon should be on this week’s pizza 🙂

    Oh Spinach pizza looks good! I came over from Cori’s blog! This is kind of how I make my spinach feta tomato pizza, now I’m thinking about adding bacon to it. Bacon makes everything better!

    I took an entire month off after my last marathon. Our bodies just crave that rest, so good for you for listening to your body. I LOVE make-it-yourself pizza. My husband and I took a risk and made a Cuban Pizza with yellow mustard sauce, ham, sliced pork, pickles, and Swiss cheese. It was delicious! Our weekly tradition is homemade popcorn for desert. 🙂

    Love that tradition that you guys have! Sounds lovely. And pizza is such a good choice.
    I think it’s great that you’re listening to your body and being sensible. Marathons are such an ‘ordeal’ for the body it needs time to just get back to normal.

    This pizza sounds so yummy! I buy a two-pack of premade crusts, one for me, one for my boyfriend. I usually load mine with veggies to make up for the carbs! It IS good fuel for running though, I must agree!

    Yummy! That looks so good. I like to cook my pizzas on a stone to get the crust evenly baked and crispy. That’s what makes the perfect pizza.
