Easy Meatless Guacamole Tacos

Happy Friday!

Woohoo! We made it, guys.

This morning’s post is short and sweet! And actually not sweet, actually quite delicious! I don’t blog recipes too too often, but as I was cleaning off my computer last night I came across one of our favorite dinners I forgot to blog.

At our household, healthy is never complicated. And if it IS complicated, then you can bet it won’t get made. Healthy recipes that are easy, fun to put together, and appealing to both of us are what make it into the regular lineup, and deserve two thumbs up.

I give you,

easy meatless guacamole tacos.

BAM.

Completely fool proof. Completely easy. Completely fast. Completely a crowd pleaser.

1. Homemade guacamole. For my recipe, visit this old post – homemade guacamole.

2. A handful of cheese sprinkled on the steamed tortillas. Get those babies warm, you want that cheese to melt!

3. Shredded, rinsed off lettuce can be added next.

4. Plop on a decent scoop of that homemade guacamole.

5. Add a small spoonful of your favorite salsa. We like more chipotle or smokey flavored salsas.

6. Roll, and eat!

Avocados are a GOOD fat, but of course, moderation is the key to any healthy diet. Don’t eat the whole bowl or anything! If your store has whole wheat tortillas, that would be better as well. We just used what we had on hand.

    My husband and I both absolutely love homemade guacamole!! I’m with you, I love when a recipe is healthy, easy, and fast. Weeknights just get so busy, no one wants to cook in the kitchen for hours and then clean it! Oh and I have to comment, I like your puppy plate. πŸ˜‰

    On a scale from 1-10, I love homemade guacamole about a 22. Sometimes I make it my dinner…it’s definitely going overboard but its delicious and I just cannot control myself. My tastebuds always gravitate towards Mexican.

    Quick and healthy meal is usually some sort of eggs. Who doesn’t love eggs?! Or lean protein that I can sautΓ© in a pan really quickly (chicken, turkey, etc.) and top with roasted peppers, spinach, and whatever else is in the fridge.

    This post couldn’t have came at a better time…I just bought a ton of avocados from Costco today (9 of them for 5 bucks?! Oh yeah!) and was going to search for a guacamole recipe for tonight! Thanks girlie!

    My favorite healthy recipe is roasted veggies. You can roast anything. Peppers, sweet potatoes, asparagus, zucchini… a little bit of olive oil, too good !

    Love love love guac! That is my favorite go to snack. I tend to eat the whole avacoda myself so to cut half the fat and calories I puree about a cup of peas with it. I know sounds weird. But once pureed you can’t even tell it’s in there.

    Yummy I love guac and I love tacos! I Also don’t eat a ton of meat so this is perfect. I bet adding in black beans would be yummy too!

    Those look amazing! I’ll definitely have to try that guacamole recipe out. I love the crockpot salsa chicken chili – chicken, a jar of salsa, seasoning (chili powder, cumin, salt, pepper, cayenne pepper), black beans and pinto beans – on high for 4-6 hours, or low for 6-8 hours. I love to put it on top of my salads. Easy, cheap, and healthy!

    Yummyyy!! I love avocados, however they aren’t in season here, so they are quite expensive now (like $3.00 each) I’ll stick to drool over recipes and make them as soon as they get in the markets πŸ˜›

    Just like you, I love easy recipes, but if I’m in the mood I’ll make something that requires effort!!

    This is such a good idea -idk how I have never thought to do meatless tacos! I have been loving avocados and guac lately…I’ll let you know once I re-create this!
