Lately, we’ve realized how magical a little bit of meal prep can be for our sanity during the week! I’m not sure why it took us 3 1/2 years to figure this out, but now I feel like our lives are changed.
The past two weeks we’ve taken advantage of one of Adeline’s nap times to roast a hefty amount of vegetables, and grill some chicken for our lunches. So far our favorite combo has been: zucchini, squash, onion, carrot, green bell pepper, sweet potato, red potato, and chicken.
For our first batch, Adam actually grilled everything outside, which turned out delicious, but took a little more work. He cut most of the vegetables into smaller portions, but then once everything was grilled, we diced it all up. We made 6 batches, so we each had 3 lunches ready for the week.
The second time around, we skipped the chicken and just opted to roast all of the vegetables together at one time in the oven. We diced up all of the vegetables, tossed them with some extra virgin olive oil, salt, pepper, and a little bit of garlic powder, then put them on a cookie sheet in the oven at 400 for about 45 minutes – 1 hour.
So. Good. Like, SO good. Being able to warm up a filling, homemade meal at work is the best thing ever. I wish we’d started this years ago! I now understand what all of the “meal prep” hype is about!
