Happy Wednesday! Popping in to share a favorite summer recipe of ours. Also, I’m not sure how much I’ll be posting the next couple weeks – we close on both houses next week, so we are going to be swamped with moving! Wish us luck! I can’t wait to share all about our new house though…the countdown to decorating has begun!
In our house, summertime calls for strawberry shortcake. But not store-bought, and not restaurant made. I’m talking, 100% homemade, all the way down to the whipped cream. It’s making my mouth water just thinking about it. There’s just something about a sweet strawberry dessert to cap off a hot, busy summer day, and it’s a great way to mix up my usual chocolate go-to!
I would be lying though if I said I was the sole crafter of this recipe! Adam is the kitchen genius over here, so it’s not uncommon for him to surprise us with something delicious. We recently enjoyed this homemade strawberry shortcake, and it was too good not to share! We tried to get Adeline in on the action, but sassy pants actually doesn’t like strawberries! Still not sure she’s my child…
Here is what you’ll need:
- Fresh strawberries w/ sugar to coat
- 2 cups flour
- 4 tsp baking powder
- 3/4 tsp salt
- 1 Tbsp sugar (for the shortbread)
- 2 Tbsp butter
- 2 Tbsp shortening
- 3/4 cup half & half
- 1 cup heavy cream
- 2 Tbsp sugar (for the whipped cream)
- Vanilla (to taste)
First, wash and slice up those delicious strawberries, then toss in a little bit of sugar to help bring out the sweetness. You’ll know you got the sugar mixture right when they start to ooze strawberry juiciness in the bowl!
To create the shortbread portion, preheat your oven to 450. Mix together your flour, baking powder, salt, and sugar. Slowly add in butter and shortening. Pour in half & half. Then shape or scoop into whatever shape you want and bake on a cookie sheet for 10-15 minutes or until golden brown.
Once your shortbread comes out and it cools, it’s time to make your whipped cream! This is actually super easy, and I had never in my life seen homemade whipped cream until I met Adam and his family. I literally didn’t even know it was possible, actually! But much to my surprise, it’s AMAZING. All you’ll do is use your hand mixer to mix your heavy cream, sugar, and vanilla on medium to high speed until you reach a consistency that when you remove your mixer and hold it upside down, stiff peaks form and stand on their own.
Once your whipped cream is done, it’s time to assemble! Start with your shortbread, add a pile of strawberries, then add a heaping dollop of whipped cream on top.
