Easy Homemade Guacamole Recipe

Hump day!

We’re half way through the week. Thank-goodness! I’ve got a lovely little recipe to share with you all today. It’s easy-peasy, and I hate that I don’t make it more often because we demolish it every. single. time!

But first, let’s get caught up on our workouts this week thus far!

Sunday: 4 HIIT miles on the treadmill at the gym, followed by a 1 mile walk with Miss Truckee

Monday: Nada. Unless you count another quick walk with Miss Truckee.

Tuesday: Not a dang thing! Girl’s night! Hey, sometimes girl time is more important.

Tonight: Weights! I’m planning on sticking with my “weights on Wednesday” plan! And maybe a quick run at the gym, especially after pigging out last night.

Tomorrow I’ll hit the treadmill again for another ~5 maybe 6, then hopefully I’ll have time again this weekend to get in a good long run and really kick off my training.

How are your workouts going? I’m playing my next half marathon training plan by ear, and running what feels right. It’s my 6th one, and I’ve learned what works and what doesn’t. And what doesn’t? Having a strict-written-in-blood plan! Although, I didย I make out my long run “schedule” for weekend planning purposes.

And now, let’s get down to important matters!

Easy Homemade Guacamole Recipe

and holy guacamole, it is tast-yyy!

I started with 4 fresh avocados, and scooped everything out into a bowl. If you want to keep one of the seeds in the bowl while you prepare everything, it will help keep it from browning. Or you can dowse it with a lemon, which I do a bit later ๐Ÿ™‚

Add 1 decent sized tomato, diced

1 diced onion, everyone is a little different on their onion preferences, but we both love it so I used about 3/4 of a small/med red onion

1 finely chopped jalapeno

a clove of fresh garlic OR a spoonful of minced garlic OR a sprinkle of garlic powder

don’t forget to spritz everything with lemon or lime to keep your avocados from browning!

add salt to taste, and optional- cilantro

I forgot to add my cilantro this time, even though it’s one of my favorite ingredients! Still good either way!

Mash everything together with a potato masher or a fork

Voila! Homemade guacamole ready to eat!

Guacamole is one of my absolute favorite year-round treats. I could eat spoonfuls and spoonfuls, and not even think twice.

It stored well overnight, covered tightly with aluminum foil and spritzed with some extra lemon.

    I love quacamole! I’ve never made it with lemon before, only lime. Makes me crave some Mexican food though!
    I’ve only had one workout so far this week- 20 minutes of intervals and a leg workout. It was awesome, but my legs are pretty sore today!

    YUM! I loooove guac! But I do not like that avocados are like $2.50 each at our grocery store right now, that’s just insane! I will save this recipe and try in the summer (or whenever avocado season is? haha)

      Ashley- $2.50 EACH?!!! Holy cow!!! They are 88 cents at our Kroger! It’s not season for them I’m pretty sure, haha, I guess that’s in the summer! Whenever I buy them in the winter they’re always rock hard and it’s so hard to find ones that are soft enough to cook with!

    I love guac! I had a friend recently bring over some guac like this but also with red bell pepper, it was SO good!

    I feel ya on the running, though. I’ve just been running what feels right, hoping to do a half in March. Though I have to say.. it’s been pretty hard. I got sick (for the first time in YEARS) last week and I couldn’t do two of my midweek runs, and then my weekend run was miserable. I feel like I’ve made no gains!

    Anyway, you made me think of this because you run what-feels-right and I think it’s so freeing!

      Marquis- With red bell pepper?? I would have never thought to add that in, but it sounds like a great idea!! You’ll get back in shape in no time, your body was probably just still recovering from being sick! You shouldn’t lose too much fitness in just a week, just keep at it and you’ll be strong again ๐Ÿ™‚

    I could eat avocado every single day… Oh wait I do! Definitely going to try this recipe to spice it up.

    Love the handle you have on your training. I find being to rigorous demotivated me!

    My favorite all time dip is 7 layer dip… Which includes guac! Go figure!

      Brooke- 7 layer dip is amazing!!!! I’ve never made it, but every time I eat it I always forget to ask for the recipe!! I’m the same way, I will burn out real fast if I don’t give myself a little time off!

    I’ve only made guac once–and it wasn’t super fancy, I think I just put tomatoes and avocados together and mashed it up. Definitely needed a little more flavor. I love your mason jar cup as well!

    Mmmm. Homemade guac is so good. Of course, it never lasts long. I’ll dip just about anything into homemade guac or hummus.

    I eat avocados all of the time! I’m glad they’re good for you. Cilantro is good, too, and makes Mexican food even better. I’m also training for a half marathon!

    Sarah, every body demolishes guac… It’s one beloved recipe by most people. So far I haven’t met a person in my life that doesn’t like guacamole. I use it as a spread in my sandwiches as well ๐Ÿ™‚
