So lately our meals have been centered around easy, affordable, and fast. When we get home from work in the evenings, we are HUNGRY. Or at least I am. Some nights I am a hungry hungry hippo and need to get started on dinner right that second, so having something already on tap is key. Come to think of it, I seem to be hungry pretty much around the clock, guess baby girl is growing up a storm!
The past two nights we’ve enjoyed fresh BLT sandwiches on toasted Ciabatta bread. With the temperatures mimicking the blazing fires of Hell lately, a cool BLT hits the spot and keeps us from turning on the oven, thus heating up the house even more.
Let’s break down the crazy affordability of these delicious little sammies:
Ciabatta bread: on sale for $2.99
Tomato: less than a dollar (don’t remember)
Head of lettuce: on sale for $.89 a head
Bacon: on sale for $4.99
Mayo: already had on hand (if you are a Miracle Whip person, we can’t be friends)
BOOM. And we made them two nights in a row.
I bought thick cut bacon, but for some reason it ended up cooking into really thin bacon, with an exorbitant amount of grease. Probably because I bought a brand I don’t usually buy…lesson learned. If I can, I like to look for nitrate free bacon, but that’s a rare commodity. Also, crispy bacon for the win, always.
Hopefully this inspires a quick meal! I’m practically counting down the days until my “quick meal” turns into grilled cheese and tomato soup!
